Cocktails
San Francisco de Asis
Tequila / mango / tamarind / pineapple / lime
Garnish: tajín / pineapple
Inspired by the Church of San Francisco de Asís, one of the most iconic historical landmarks in Casco Antiguo. For centuries, its surroundings were bustling with merchants, travelers, and sailors who arrived at the isthmus carrying tropical fruits, spices, and goods from different corners of the world.
This cocktail represents the vibrant and tropical side of the colonial city: intense, warm, and full of character, just like the lively streets that surrounded the convents and plazas of old Panama.
Las Bóvedas
Pineapple rum / Frangelico / "nance" cordial / lime
Garnish: basil / nutmeg
Las Bóvedas was built as part of the colonial defense system to protect the city from pirate attacks and to safeguard valuable goods coming from the Caribbean. Within its walls rested barrels of rum, cocoa, and exotic products that crossed the isthmus on their way to Europe.
“Las Bóvedas” blends tropical and toasted notes to represent the elegant and mysterious side of colonial Panama: a place where commerce, secrets, and adventures coexisted facing the sea.
Arco Chato
Chocolate and coffee whiskey / espresso / vanilla / cacao liqueur
Garnish: orange / caco / edible gold dust
The historic Arco Chato became a symbol of architectural resilience and one of the most important structures in Casco Antiguo. For years, it was used as an example of Panama's seismic stability during the planning stages of the Canal.
Dark, elegant, and structured, this cocktail honors colonial engineering and the intellectual atmosphere of the ancient convent, where knowledge, architecture, and history remained intact through time.
Altar de Oro
Watermelon gin / orange liqueur / avocado cordial / lime-cucumber soda
Garnish: mint / gummies
The famous Altar de Oro (Golden Altar) is one of the most important historical treasures in Casco Antiguo. Legend has it that to protect it from pirates, it was covered in dark paint to hide its true value.
This cocktail represents that duality between luxury and secrecy. Fresh, refined, and unique, it combines unexpected ingredients to reflect the hidden stories behind Panama's colonial walls.
Panama Railroad
Hibiscus and ginger vodka / eldelflower / pear cordial / yuzu
🪵 Garnish: cinnamon / mint 🪵
The Panama Railroad Company revolutionized global transit by connecting the Atlantic and the Pacific long before the construction of the Canal. Opened in 1855, the railroad turned Panama into the meeting point for engineers, merchants, adventurers, and travelers from all over the world.
“Panama Railroad” captures the industrial and adventurous spirit of the 19th century: floral, spiced, and vibrant, just like the steam locomotives and the cultures that crossed the isthmus during the golden age of the Panamanian railroad.
